Vinification

Selective hand harvesting, optimal sorting system, peristaltic pump.
Traditional vinification in concrete and stainless steel vats, temperature control, delestage twice a day, pouring in barrels after malolactic fermentation.

Aging: in French oak barrels for 18 months, 15% of which are new.
